Tutto Italia Ristorante opened on September 1, 2007, replacing Italy's original table service restaurant L’Originale Alfredo di Roma Ristorante [1] [2]. The new restaurant came about as a result of an operator change in Italy's signature restaurant. Original operator Alfredo the Original of Rome Inc. was replaced with the Patina Restaurant Group [3]. Memo Emec, Disney's regional manager of operating participants, stated that the decision to change management was made in order to modernize the eatery [4]. Another reason however, may have been due to the fact that Alfredo the Original of Rome Inc. had been tasked with creating a second dining location for the Italy pavilion as early as 1983 [3]. By 2008 however, the second restaurant had still not been built. At this time, the Patina Restaurant Group agreed to take over L’Originale Alfredo di Roma Ristorante, under a new name[3]. Furthermore, Patina also agreed to build the second dining location that Disney had been requesting[3]. After the change in ownership, L'Originale Alfredo di Roma Ristorante became Tutto Italia Ristorante [2].
In 2012, Tutto Italia Ristorante closed for a major three month refurbishment [5]. At this time, not only was the restaurant remodeled, but a conjoining wine cellar called Tutto Gusto also opened [6]. Describing the refurbishment, the Disney Parks Blog noted,
"The makeover gives Tutto Italia a more expansive feel, with covered outdoor seating for 45 with ceiling fans and lighting, and pretty new carpet, dark-wood booths and spacious banquettes replacing some of the tables in the dining room. The lovely wall murals and elegant chandeliers remain." [7].
