The genesis of what would eventually become PIzzeRizzo began in the early 1990s, when Disney Imagineers began developing a new Muppet Studios are for the Disney-MGM Studios. As part of Phase Two of the project, Disney planned on creating "The Great Gonzo's Pandemonium Pizza Parlor", and interactive restaurant run by the Muppets Gonzo and Rizzo the Rat .
According to the restaurant's backstory, Gozno and Rizzo would have hired the Swedish Chef to run the kitchen. Predictably however, this would have led to trouble. While guests watched their meals being made "live" on overhead television screens, all sorts of vignettes would play out. These could have included: The Swedish Chef involved in a food fight, lobsters taking over the kitchen or the food coming to life. In the restaurant itself, interactive events would happen such as an explosion in the kitchen .
Furthermore, dishes in The Great Gonzo's Pizza Pandemonium Parlor would have been delivered to guests by Rizzo and his friends (with the help of servers).
Following the death of Jim Henson on , plans for Muppet Studios were cancelled. Due to this setback Imagineer's plans for The Great Gonzo's Pizza Pandemonium Parlor evolved into Mama Melrose's Ristorante Italiano, a classic Hollywood themed Italain restaurant.
In 2016, Disney announced that a Muppet themed pizza restaurant finally be added to Disney's Hollywood Studios . The new restaurant "PizzeRizzo", took the place of the former Pizza Planet dining location. Operated by Rizzo the Rat, PizzeRizzo opened to guests on November 18, 2016 .
In August 2017, the name land that houses PizzeRizzo was changed from Muppet Courtyard to Grand Park. At this time, Disney also began offering mobile ordering in the restaurant .
