Although not ready for opening day, Sleepy Hollow Refreshments opened in 1971. The restaurant takes its inspiration from the 1949 Disney movie "The Adventures of Ichabod and Mr. Toad" <ref> http://disneyshawn.blogspot.com/2009/07/sleepy-hollow.html </ref>, which was in turn based on the novel "The Legend of Sleepy Hollow" by Washinton Irving. Following the name change, the light blue shingles on the restaurant's roof was removed, as was the ivy that could be found on the building <ref name= "easywdw"/>.
  
Sleepy Hollow Refreshment’s initially served snacks (including its famous funnel cake and caramel popcorn) and drinks; however the menu has since changed quite a bit.  Over time the menu also included, slushies, Mickey Mouse waffles, and even chicken and wild rice soup. In November of 2011, it was announced that Sleepy Hollow Refreshments would be changing its menu once again <ref> http://www.disneyfoodblog.com/2012/03/06/new-breakfast-waffle-sandwich-at-sleepy-hollow/ </ref>. Waffle sandwiches were then added to the menu in three varieties: sweet and spicy chicken, ham, and Nutella with fresh fruit. The building that today houses Cheshire Cafe originally opened in 1973 as Fantasyland Art Festival, a caricature and portrait merchandise location. In 1983 the building was repurposed as a dining location named Enchanted Grove [1]. The quick service restaurant remained essentially the same until October 11, 2011 when it was renamed Cheshire Cafe [2] [3]. Following the name change, the light blue shingles on the restaurant's roof was removed, as was the ivy that could be found on the building [2].
